I designed these cake banners last month for my husband’s birthday, but I’m just now getting to the blogging about them. Usually when I’m doing a blog post that involves baking, I do all of the baking at night. It’s impossible for me to be in the kitchen while my little people are awake. I know most Mom’s probably love baking with their kids. They may even have coordinating aprons. I don’t. As I’ve said before, I’m not crazy about baking. Flour stresses me out. Adding my kids to the mix, takes it to a whole other level. Though as much as I protest baking, I had fun designing these mini 3 layer cakes.
I’m loving these mini cakes I designed! They are only about 2 1/2 inches across by 3 inches high. They are so small, you shouldn’t even feel guilty eating one. Can you guess what I used to make these cuties? A…. whoopie pie pan. Ta da! It took a little experimenting with cooking times, but I finally nailed it!
You can use any recipe or box cake mix. It does not have to be a whoopie pie specific recipe. I used a carrot cake recipe, but a box mix should work fine also.
Preheat your oven to 350. Then, coat your pan with a non stick spray. Next, drop a heaping tablespoon in each whoopie pie cavity. You do not want to fill it to the top, or you will have a giant mess. You have to allow room for it to rise just enough, but not too much. Lastly, bake for 7 – 10 minutes. You have to know your oven. Mine baked in 7 minutes, but yours might take longer.
Their size makes them sometimes difficult to handle, so after they cooled, I popped them in the freezer over night.
I used about a tablespoon of icing between each layer, then topped it off with a dollop.
Print, cut, and attach toothpicks {tape works fine} to the mini cake banners and carefully insert into your mini layer cakes. Seriously, how boss would these be at a party?
