Don’t you just love it when a plan comes together? More often than not, a lot of my ideas are trial and error. Re-do after re-do, until I get it right. I finally got a break with these little sugar cookie baskets, because they just worked, right from the get.
I saw this muffin tin technique on Pinterest. I didn’t pin it, and now I can’t find it again. When I saw it, I wondered if I could make a cookie handle and turn it into a basket. Turns out, I could and I did!
Supplies I used:
- Firm sugar cookie dough {recipe at the end of this post}
- Cream filling {recipe at the end of this post}
- Small batch royal icing {recipe at the end of this post}
- Assorted berries and fresh mint
- Parchment paper
- Piping bags
- Paper towel cardboard tube
- Shot glass or other small glass
- Rolling pin
- Pastry cutter or cookie cutter
- Pizza cutter
- Muffin tin
- Baking sheet
Basket instructions:
Prepare muffin tin with cooking spray.
Roll out cookie dough and cut the basket portion using a pastry cutter.
Carefully press cut dough into muffin tin.
If it tears near the bottom, just patch with extra dough. {you will not see this once it’s covered.
Bake according to recipe.
Handle instructions:
Cover cardboard tube in parchment paper, tuck in the ends.
Roll out cookie dough and cut the handles using a pizza cutter. {mine were approximately 2.5 inches}
Carefully lay cut handles over cardboard tube and place cardboard tube onto baking sheet.
Make sure, the handles are not touching the baking sheet. If needed, trim any excess.
Bake according to recipe.
Assembly instructions:
Once the cookie parts have cooled, attach handle to basket using royal icing.
Cover baskets and let dry overnight.
Pipe cream filling into baskets.
Fill with berries and mint.
Serve immediately.
