OMG! This is probably one of my most favorite meals I’ve ever made. It’s filling, light, healthy, and defreakinglicious! Unless you’re like my punk sister who responded with, “yuck”…then you’ll agree with me about this fantastical meal. Before I move forward, a little side note: Props to the people that style food for pictures. Lord help me, I just suck at it. My pictures do not do this meal justice. Trust. Quinoa and kale cakes with pan seared sea scallops rocked my world!
Aside from allergies, I’ve never understood why some people just don’t like seafood. What? Seafood, is my most favorite cuisine…it’s the best! Although, I’m sure some people have a hard time grasping that I think chicken ‘n dumplings is the most disgusting food ever created. Years ago, the same punk sister I mentioned above, once left a life sized can of chicken n’ dumplings in the passenger seat of my car. Yeah, she has jokes.
So, I’ve been cooking with quinoa a lot lately. I actually have a few recipes I need to post. Have you tried my quinoa stuffed peppers? Anyway, it’s my new favorite ingredient. It kind of just takes on the flavor of whatever you’re cooking. Seriously, it’s chill like that. Also, bonus points because it’s a major superfood. Quinoa has all 9 essential amino acids. We all know or do we..that amino acids are the building blocks for protein. If you are rice eater, try substituting with quinoa. I even got my punk sister to buy a box.
